Once the beef is slaughtered and dressed in our inspected butchery, it is carefully cleaned and then hung in in a temperature & moisture-controlled dry-aging room for 14 - 21 days, to enhance the natural flavor and texture.

After careful aging,the beef is cut to exact specifications with an eye to the natural musculature and size of the animal while emphasizing the very best taste and texture of the beef.
